Layers of coconut biscuit, raspberry cream and fresh raspberries with white chocolate and lemon zest wafers.

This cake is named after a dear client, who requested a raspberry/coconut/lemon flavor profile for his birthday cake. I never made something like this before, so I pulled components from different desserts I've made and hoped they would turn out good together. The cake was a big hit!

Serving Tips:

  • Use a knife with a smooth edge, not serrated. 
  • Before cutting, dip the knife in hot water and quickly dry off excess water with a towel. 
  • Cut.
  • Do this for every slice. It will give you a very clean slice and prevent an unattractive smear.
