Sweet tart dough filled with pumpkin-ginger custard, topped with candied cranberries.

This year we tried a new pumpkin from a farm in Blue Bell PA, the long neck pumpkin. It was highly recommended as “the one the Amish prefer”. We bought an obscene amount of pumpkins, cooked them slowly with ginger and pureed them to bring you a fresh and bright pie this Thanksgiving.
