Puff pastry shells stuffed with classic Italian meringue.
In my grandmother’s tradition, I use a classic Italian meringue and not a processed cream mix as most commercial places do. For the shell, I use puff pastry made with real butter. It is more expensive but the quality is undeniable superior.
Regular — 4" long, 3/4" cavity
Mini — 2" long, 3/4" cavity
